Turkey Thighs/Wings

I would like some information on how to egg turkey thighs and wings.
Should I cook them on a raised rack with a drip pan? And should the cook be direct or indirect? and what should the dome temp be?
Also is it necessary to marinate them first or just slap some rub on them before the cook?[p]AuntieEgger

AuntieEgger,[p]for turkey wings, i like to brush some melted butter on them, then some rub (dizzy raging river/tsunami spin/shaking the tree all work well .. . jamaican firewalk if you want them hotter) .. . then onto a raised grid indirect at 350 degrees for about an hour or so until done. .. .really really tasty. .[p]
[p]turkey thighs, i like to d-bone them (very easy to do), stuff them with either a mushroom pancetta mixture, or something like prociutto and parmesan cheese, tie them up, brush them with melted butter, salt and pepper, then roast them at around 450 degrees in a pan for about 45 minutes to an hour until done, then make a pan gravy with the drippings (add a little flour/white wine/chicken broth). ...[p]

mad max beyond eggdome, Thank you so much for the step-by-step tutorial! Darn that turkey looks good! Question is, if one were to bookmark your post, how long would it be available to view? Seems like I tried that here a while back with a bread recipe and it became unavailable after not very long. Has anyone added it to the recipe collection on their site or are there any plans for it in the future? This is one that should never go away! As an avid photographer, I can fathom what you went through to produce what looks like a simple series of photos (multiple shots with varying degrees of lighting & angles, and then the cropping, uploading, and finally, posting. Thanks again![p]Rascal

you know, i'm the worst when it comes to putting recipes on the recipe section of the forum ... .you can usually find my stuff by googling through the archives, although i couldn't seem to find either of these posts today when i looked.. . .i do keep all my posted photos on photobucket though, so it was pretty easy to recreate. ..my best suggestion is to print this out, then you'll always have the date and time to go back through the archives and find. ...

We never get turkey parts up here - just whole turkeys. I wish I could just buy the wings.[p]I have not caught up since the vacation - quite the opposite. I managed to catch something (probably on the plane), and I have missed two days of work so far. It's awful. Brent is coming home tonight, and he says that he feels like he is coming down with something too - which of course is going to be three times as bad as whatever I might have.
Boys are so whiney!!

hmmm, wonder if i froze a couple of packages of wings up really good, they would stay cold enough with ice packs for the the 2 day fed ex delivery up there with the parmesan and good balsamic? .. . [p]and who is whiney??? .. ..where's my salmon dammit!?!?!?! . . did someone say whiney??? . . .i'm sure if brent is sick, its truly legitimate!!.. . .
