Stuffed Monk Fish

The stuffed monk fish was great and worth working in the heat, inside and outside. I used Cherry smoking chips with a medium fire and cooked about 20 mins until meat temp was 145. Roasted corn on the cob and a very cold Fat Tire Ale completed a 3 course meal (Ale counts as one of course). Recipe is in Hot and Sticky BBQ, author Ted Reader, ISBN 0028644786[p]stuffedmonkfish.jpg[p]

    Ted Reader,
I am particularly fond of your fish recipes on the BGE and the marinades you concoct. They ALL taste good and are fun to prepare and eat.
