Roasting corn

Real quick (for tonight's dinner), how do I do corn on the cob on the egg? Just throw it on or do I wet the corn first? How long do I leave it on?[p]Should I pull the husks back first and then put them back in place? (To make it easier to get them off after roasting?) I've read that putting it in the m/w damp for 45 seconds makes the husks and strings come off real easy.[p]Thanks,

Ice water for 45 minutes in the husk. Grill away.

dimplesmom,[p]My favorite method is to pull the husks back and get rid of the silks... Soak in cold water, for 30 minutes (not necessary, if you are in a hurry, but it keeps them hydrated through the cook)... I cook them until they look roasted, 8-10 minutes... After you take them off, then brush with melted butter and seasonings... Oh, they are so good...[p]Thanks...

dimplesmom,[p]And yet another method.[p]1) Pull the husk back but do not remove, remove all the silk.
2) Wet the husks.
3) I like to coat with EVOO (extra virgin olive oil) and then sprinkle some cajun seasoning.
4) Wet the husks just a little more.
5) Now I wrap in Aluminum Foil and leave on the grill for about 45 minutes, rotating every so often. This basically steams the corn with the water from the husks. I think I would do this with a dome temp of 350 or so.[p]- or -[p]1 through 4 the same
5) Some people like to put them on without the foil and take off when the husk has browned on all sides...again turning every so often.[p]You can't go wrong really.

If you have good corn, cut the silk end off and cook 30 minutes at 350 dome, turning every every 7-8 minutes. The silk will come off easily after cooking and I don't soak it. Melt some butter and brush it on with a little S&P. -RP

AZRP, Being from the South, if you have first season, "early corn", you can always prepare it in the husk without removing silks without any concern of worms or bugs..corn that is not early season ..you are risking cooking the little "critters" if you do not check by pulling back husks to see.

Ann-Sugar Magnolia or whatever your name is today,[p]I am of the south also, and prefer not to meet up with any of these bugs... Therefore, I pull back the husks and clean the silks out of the way... And then make sure, there are not any other critters while I have the husks pulled back..[p]Then proceed onto roasting the corn... Extra protein, in that way, is not my goal... No bugs, for me...[p]Thanks...

AnnaG, no problem about the name... I was just teasing with AZRP about the corn, worm and bugs but it is a fact. I think girls might look at corn and "critters" differently than guys. I just do not care to have my protein added that way! I noticed there was a newbie "ann" and I thought if I just put Ann...no one would realize I was the multi named person!

Well, first of all, I did not have "good" corn. I had bought it a few days earlier and it was starting to dry up. Also had to cut a little moldy part off of one piece (which I gave to my unsuspecting husband). [p]I pulled the husks back and removed the silks (I really don't like to deal with the silks at the table) and then put the husks back and soaked it for 10 minutes or so.[p]Onto the barbie it went with the burgers at 450. Pulled it off when the burgers were done. The corn had good flavor but not good texture. I don't know if that was because it was old or not cooked enough or both.[p]Now, I have never in my life seen worms or bugs on corn. I didn't even know I was supposed to be looking for them! I sure am hoping this is something peculiar to your part of the country and that I haven't spent my whole life eating buggy corn![p]Gwen[p]

dimplesmom, Gwen, you are lucky if you have never seen an ear of corn with a "silk worm". Amazing. I do not like to purchase corn in a grocery or such. Will on buy corn from a large produce market, farmer's market or if riding through the state,,,a stand on the side of the road.In other words, corn that has just been cut off the stalk. Then I purchase large bags and will husk, wash, and cut the corn off the cob then freeze. Silver Queen is very sweet and comes first during the season. I have friends that do buy the corn that is still in husks in the grocery or even corn that has been husked and the tips cut off (pre-packaged). Unfortunately, I prefer to even have my butter beans, crowder peas ..all veggies...shelled and then I freeze them for my freezers. Just do not like to buy the frozen produce in the stores. Call me old fashioned but my family spoiled me, I suppose! Of course, my 25 yr old son...would not even consider doing what I do...he buys all the pre-packaged veggies and there is nothing wrong with them at all. Just a habit I cannot break! Getting ready to buy some speckled butter beans and have them shelled for my freezer! Enjoy your corn and I hope you never see any silk worms. Again, never fear of worms in the early season in the south...only as the season gets later. That has been the "standard" all throughout my grandparents life time too. Just some old southern history on my end. Take care!

Maybe the worms are a southern thing and not a west coast or PNW thing. I know that other areas of the country have bugs we do not.[p]I'm with you on preferring not to buy produce at the grocery store. I buy the majority of mine at the farmer's market or at produce stands. I try and grow what I can. This year my garden didn't get much put in - just tomatoes and some lettuce which I did not keep going so is all gone now. I probably still have time to plant more lettuce for the remainder of the summer tho.[p]Do you put your stuff in plastic freezer bags or do you have one of those special machines that sucks the air out? I find I get a fair amount of frost build-up (which I equate with freezer burn) in everything I freeze. I have a fairly new stand-alone freezer, so I was surprised and disappointed.[p]When you take your corn out to use, for instance, how do you prepare it then? Do you just steam it and it's ready to go? I need to start doing more of this.[p]I have not been successful growing corn here in the PNW. I don't know if I have enough sun. But I finally got tomatoes to grow by growing them in straw bales this summer. Probably would not work for corn. Next year I'll save the very hottest part of the garden for corn and see what happens.[p]Gwen
