    I own the book listed on that site by Rytek Kutas. It's a great book on sausage making, and the (late) author also gives a lot of personal stories to give background. I didn't really understand what curing was until reading that book.[p]-rcq

    if you're looking for sausage making equipment... check cabela's //// their equipment looks like the same thing as the sausage maker(made in the usa... see PRAUGOTRADE/ PROGOTRADE)...except a whole lot cheaper.... especially if you live near a cabela's store where you can get fantastic deals on things that have been returned for whatever reason in their "bargain cave" .... i bought kutas' book 25 years ago.... i still use it as a reference.... although i think he uses too much salt....it's considered the "bible" in sausage world...a great starting point.... it eliminates all the mythology associated with smoking meats ...
