I had planned to serve this with the Pulled Pork today, however I tried it last night and now I must make another recipe. We ate the whole thing. All I can say is try it.[p]Peaches and Plums and Dumplings[p]
Pit and cut up four big peaches and four big plums. Put in a Dutch Oven with[p]
1/2 cup sugar
3/4 cup water
grated rind of one lemon[p] and get it hot[p]
Make a dumpling batter-[p]5/8 cup sifted flour
3/4 tsp baking powder
2 1/2 Tbs sugar
pinch salt
2 Tbs butter
2 1/2 Tbs milk
few drops lemon extract (optional)[p]
Sift dry ingredients together, cut in butter, add milk and extract. Mix quickly, do not over mix, it will be lumpy.[p]Drop batter by teaspoons into simmering fruit. Cover and cook gently for 25 minutes. Don’t take cover off while dumplings are cooking. You can serve with vanilla ice cream.
This is a small recipe and I am not sure how many it will serve. ( About two if you pig-out)[p]The Dome temperature was 250. [p]Now it is to the store for peaches and plums.
