In about an hour I will light a fire under my large egg and begin to cook the 8-pound brisket I plan to serve to neighbors tomorrow at supper time. I will cook the brisket at 225-250, and shoot for 2 hours per pound-- using the eggfest 2000 recipe. Am I allowing enough time? Too much time?
