I do not now if I mentioned that when you remove the tomatoes from the frying pan a cool trick to keep the product crisp all around is to stand the tomatoes in a vertical position.Use a rib rack,dish strainer or inverted roasting rack with paper towels under the rack to catch the drippings.Let then them drain and then plate and enjoy.
