OT.Fried tomatoes or perhaps any other veg in a batter mix

Tiz the season for tomatoes.I have a great reputation for my fried tomatoes which are different than the usual way.I use a beer batter mix with what ever spices you like.I just use salt,pepper.tad of sugar,and poultry seasoning.After you cook them on both sides use a rib rack or dish strainer to stand those guys up in a vertical position and let drain.You will find that no longer will you have one side soggy and wet and the other side dry and crisp.The air flow at 360 degrees will make a difference.Dont forget to put paper towels etc. under the rack.

    We like to slice them about 1/4-3/8" thick, dredge in an equal parts flour and seasoning of your choice, bread crumbs (panko) mixture. Fry in 1/2" peanut oil or what ever you use. Be sure the oil is hot 325+. 2-3 minutes total turning once. Drain on paper towels. Careful not to burn.HTH.

    Here is my secret method.People on Delmarva have told me how good this is.When I tell them how I make them they look at me in a funny way till they taste them.
    2 eggs beaten
    1 tsp sugar
    1/2 tsp salt
    1/2 tsp poultry seasoning
    2 cups flour
    1 bottle beer[p]Mix it up till it feels like a waffle or pancake batter.
    Put the tomatoe slice on top of the batter for a second and turn over and coat the other side.
    Lift out and let excess drain off and then into the frying pan.I will convert you from the way you have done them in the past.ENJOY!!!

    Give this one a try. Slice the tomatoes. Dredge in cornmeal. No egg bath, nothing other than maybe a little salt. Fry. [p]I use the same method for okra. I actually prefer okra boiled, but my wife won't touch them boiled, so fried at our house.
