<p />is the recipe name for these little gems. The recipe is on page 268 of Smoke and Spice. These are pickled watermelon rinds wrapped in thick cut bacon held together with a toothpick. They were cooked at 275 dome until the bacon was done, about one hour and ten minutes. They were very juicy.The bacon and pickled taste, believe it or not, goes very good together. I've never had pickled watermelon rinds before, but I must say they are very good right out of the jar. Sweeter than ordinary pickles.[p]You won't be wasting your time trying these.[p]Carl T
