<p />Hello folks. [p]I am looking for a GOOD, MOIST, SWEET cornbread recipe for cornbread muffins. I have done a few of those I found on the web and they all didn't make it ... dry / hard as rocks / etc. [p]Somebody please give me a good one, thanks !! [p]FB the SmokinGuitarPlayer

  • Big Mamaw’s Mile-High Cornbread [p]

    [p]2 boxes Jiffy Corn Muffin Mix 4 eggs - beaten 1 ½ sticks butter - melted 1 pkg (12 oz) frozen corn - thawed 1 med onion - diced fine 1 cup small curd cottage cheese Pinch of salt, sugar & cayenne pepper [p]

    [p]Combine all ingredients - mix well and pour into buttered 9 X 13 casserole dish. Bake in preheated 375 degree oven for 35-40 minutes..until golden brown. Very moist & dense…best cornbread I ever ate, bar none. Iffin’ ya wanna kick it up a lil’ bit…add some chopped green chilis or jalapenos to the batter.[p]

    This is my great grandmother’s recipe:
    1 Cup White cornmeal
    1/2 Cup Flour
    1t Baking Powder
    1t Salt
    1/2 t Baking Soda[p]1 Rounded T of Crisco
    2 T Sugar (make them rounded if you want sweet cornbread)
    1 Egg
    1 Cup of Buttermilk[p]Mix but leave lumpy. Bake in greased pan (or smoking hot cast iron skillet with melted butter) at 450 for 12 – 15 minutes (until golden on top).

    by Peter P. Benac (Celtic Wolf)[p]Ingredients :[p]1 1/2 cups plain Cornmeal (not cornmeal mix or self-rising)
    1/2 cup Flour
    1 Tbls. Baking Powder, preferably Rumford
    3/4 tsp. Salt
    1/2 cup Sugar (I use Splenda) Use less if you want it less sweet.
    3/4 cup Milk
    3/4 cup Sweet Buttermilk
    1/2 cup Vegetable Oil
    2 large Eggs[p]Preparation :[p]Preheat Egg to 400 degrees.[p]Preheat Dutch Oven or a square baking dish in Egg. [p]Blend dry ingredients in large bowl. Blend milk, oil, and eggs, and add to
    dry ingredients. Blend till all is combined.[p]Use a small amount of Crisco or bacon grease (say about 1/4 tsp or so) into
    dutch oven or baking pan, brushing it to cover all surfaces well. Place back
    in oven for a few minutes - you want these hot.
    Remove pan from egg and pour mixture into the hot dutch oven or pan.[p]Bake (covered) until golden brown on the top, about 20-30 minutes.
    Fork should go in and out clean.

    SmokinGuitarPlayer,[p]Celtic Wolf has a good recipe he uses for cornbread in a cast iron dutch oven. I think he mentioned that the recipe is in a recent Florida Eggfest recipe book (available on WessB's site.)

    Haggis,[p] It works well for corn muffins too. I'd probably double the recipe if you want more then a Dozen.[p]
