Should not hurt the process. I do mine 3-4 hours and they work fine. You might want to ask "Chubby" he has a special process and they sometimes burn up. Evans LOL.

soaking them just delays the char (and char=smoke). a little cedar smoke is good, hopefully it kicks in mid-cook.[p]a dry plank would smokke throughuout, and it can be resiny and acrid.[p]it's essentially being baked on a throwaway platter. and that platter starts to char and ends up adding a hint of smoe. 'hint' is the operative word.[p]oversoaking isn't a problem. NOT soaking would be.
it's a great cook. a fave of ours.
