Tasso Experiment Underway

Well, finally got around to trying some tasso. Cut a 5lb. butt into slices after deboning it (golly, almost typed "boned a butt", but I figured you folks wouldda thrown me outta here!) and applied the curing rub. Probably do the smoking on Sunday. Next part of the experiment will be to try a brining and injecting a whole butt first, which brings me to my next question: Anyone have any suggestions on the best places to find Morton's Tender Quick or Sugar Cure? Grocery stores around here don't carry it and if I order it from some of th places I've seen online, I'll pay more for shipping than for the product![p]MikeO

    Shelby,[p] I did some searches and sorta deconstructed and reconstructed the rubs into something that sounded good -- I usually play it by ear. Don't have the list with me at the moment, but it included in decreasing order: kosher salt, cayenne, paprika, cinnamon, brown sugar, dry mustard, white and black pepper, garlic powder. Might be one or two other things . . .[p]MikeO

    See, I wouldn't think of including either cinnamon or brown sugar in the rub.
    Being in south Louisiana, I've got tasso in all the grocery stores and a couple of smoke houses not far away that make an excellent tasso. I've had mixed success in making mine. I always tend to over do on the pepper. Just means some folks won't eat it.
