Update on Brisket

Eleven hours so far on five pound brisket. Tried new set-up which may have something to do with it. Had chicken fried steak for dinner. Going to see this cook thru at as close to 200 as I can. Hovering in 225 range for the last three hours. Good news briskett is at 191. Guess I'll have a midnight snack and a great lunch tomorrow. I think the set-up will work out to be great on a medium. Using grate with pizza stone and the new grate with extensions. Can set all pieces in at one time as it acts as one unit. May go to a little smaller pizza stone. I'll update on how it comes out.
