Have a briskett on the cooker. What is the final temp. we are are looking for? 190,200,210 Am at 174 now.

Flajoker,[p]I pull mine in the 185-195°F range. Insert a fork into the meat and slowly remove the fork. The brisket is done when it no longer wants to lift with the fork.[p]Test it now to get a feel of it. The thinner parts will finish first. I go for a compromise between the thicker and thinner.[p]Spin
