Turkey Breast - Temp & Time

Among other things, I have been requested to do a turkey breast over the weekend. I've looked through recipe archives and most seem geared towards the whole bird.[p]My question is, any suggestions on egg temp and internal temp of breast when done? Also any estimates on how long the cook will take?[p]Thanks,

    Dan.,[p]I would cook it in a rack over a drip pan between 350º - 375º. You can use whatever internal temperature you feel is safe, but I use 160º with a ten minute rest before slicing. It should take about 15-20 minutes a pound, give or take.[p]

  • Dan., I just egged a 4.5 lb. turkey breast last weekend. Used a recipe from "Sublime Smoke". Smoked it at 250 degrees on the BGE rack with a pizza pan under it for about 5 hours. It was absolutely delicious; we're still eating turkey sandwiches. If you need a recipe, e-mail me and I'll send it along.
