Arborio rice is pretty easy to find at places like Whole Foods and slightly up market supermarkets like Harris Teeter.[p]Chef's Catalog sells risotto rice and has an interesting risotto primavera recipe at the link below:[p]TNW

i make risotto a lot. . .very, very easy. ..[p]first, like NW said, get good aborio rice. ..it has a lot of starch and that is what gives it the creamy texture as it gives up the rice. .. [p]all you'll need is, [p]the rice
one onion, diced small
1 cup of white wine (really doesn't matter what kind)
plenty of broth (chicken or beef if you want a little heftier flavor). ..[p]first, make sure the broth is hot (adding cold broth to hot risotto during the cooking process isn't the adviced way to go)and for a couple of cups of rice, figure on about 4 - 6 cups of broth[p]in a hot pot, heat some olive oil. . .add the diced onion and stir till opaque. .. then add the rice. . . you have to be constantly stirring from now on. ..stir the rice in with the onion till its well coated with the oil and starting to 'toast' a little ..[p]now add the cup of white wine .. .stir until the alcohol is boiled off, the wine has evaporated and the bottom of the pan is starting get creamy with the starch from the rice. . ..[p]now start adding the broth, a cup or two at a time. ..you need to keep your fire on high heat at all times, and constantly stirring (a wooden spoon works best for risotto). . .each time the broth is fully absorbed, add some more, a cup at a time . . .keep adding broth and stirring until the rice reaches the texture you are looking for. ..[p]add a little salt and pepper at the finish if you want. .. you can also add some sauted shrooms (when made with beef broth, a risotto with mushrooms is really outstanding). . .[p]here is a pic of risotto with ox tail stew

mad max beyond eggdome,[p]alborrio rice it is.[p]wow that rice looks exactly how i like it. that seems a little bit simple. is adding a little bit of garlic or butter and maybe some sour creme a bad idea? i dont want to put too much stuff into it if it will take away from the overall dish.[p]ive never cooked risotto but i always eat it at restaurants.

i wouldn't add sour cream, the rice literally makes its own cream (again, all the starch). ....add garlic if you want, but i'd go light and add it right at the beginning when you are sauteing the onions).. ..i know a restaurant that adds a big dollop of truffel butter at the end. .. good stuff. ....the one thing i forgot to mention, is to add some good, grated parmesan regianno when you serve it up. ..that is the best!! . ...
good luck. ...remember, high heat, and keep stirring from beginnig to end. . .its a labor intensive dish, but only takes about 20 - 30 minutes to make. . .
