My egg cook

Well I cooked some back ribs on a large egg for that class. I used that ceramic deflector with the legs pointing up, a foil pan on top and four slabs of baby backs rolled and skewered. The egg held temp beautifully and really did burn almost no lump. The ribs were first class. I like the way it cooks. The thing operates similar to my Jedmaster in that the vents are barely open. I feel that is what keeps the food so moist, the jed does the same thing. My only complaint is with that hinge. Seems like they should be able to come up with something better than that. There were quite a few new owners there who were really interested in learning to Q. I told them about this place. I'm not converted but I do think Humpty and I bonded.

drbbq,[p]Its not for everyone, but the egg (or other ceramic cooker) is a great option for many! I like good Q, but didn't want to have to buy a pickup truck to haul my smoker around! Also, I can let it go all night (while I sleep) and do some real slow cooking without having to tend to it.[p]Glad to hear you had a good exprience with the egg![p]Smokey
