Prime Rib

Last night I cooked Doc Chickens Prime Rib recipe and as usual, it was a real winner. I was digging through the freezer a couple of days ago and found a 3 pound boneless roast, had completely forgotten about it and actually thought it was a package of ribs as it was burried in the rib section of the freezer. Anyway, it hit the egg last night at about 500 degrees for 40 minutes and it came out PERFECT. Had some baked 'taters with it and a saute' of fresh garden veggies (squash, green beans, tomatoes, and some canned artichoke hearts). GREAT dinner and some leftovers for sammiches today at lunch. Thanks again Doc, that recipe is a real keeper.[p]Troy
