I've read about cooking on indirect heat. How is this done with the BGE and what types foods to Cook with indirect?

    <p />Thomas ,[p] There are many ways to set up the BGE for indirect cooking. Basically, if you put any barrier between the fire and the food, you acn say you're cooking indirect. The barrier can be anything from a drip pan to fire bricks to a plate setter. Advantages are more even cooking and the ability to use a bit higher temperature to cook something than you would normally use for direct cooking. Almost any food can be cooked this way depending on your tastes. Here's a picture of my setup for cooking pork shoulders. I've got the roasts setting on a grid, which is placed on an upside-down plate setter. A drip pan is underneath the meat. Check out TimM's and gfw's homepages for more information . . .[p]MikeO
