Butterflied Chicken?
BluesnBBQ
Posts: 615
I want to try grilling a whole chicke, butterflied. I've never tried this before. Do you just remove the backbone, and flatten the chest, or is there something else you need to do?[p]Any tips on grilling times, temps and rubs or marinades?[p]Thanks in advance!

BluesnBBQ,
Cut down the backbone (on each side of it) and remove. Turn bird over and whack it with the palm of your hand to flatten. Rub with your favorite rub and peanut oil.[p]Cat posted a recipe that I really want to try....a butterflied stuffed-under-the-skin recipe. She has times and temps in there as well. [p]Cheers!

Ooops. Her recipe is for turkey, but would probably work on a chicken! Maybe slightly higher temps and a thinner layer of stuffing![p]Here it is.

Nature Boy,[p]Thanks. I think I'll try a basic lime and garlic marinade and cook it direct. I'll let you know how it turns out.

Sounds perfect. Enjoy it!
