Ideas on how to cook beef short ribs
Hi All, [p]I bought my egg on 4/27/07, so definitely a newbie trying to learn...[p]These ribs are already cut into separate ribs and I was wondering how to cook them. All of the recipes that I have viewed, seemed to apply to a slab/rack of ribs. [p]Newbie here, so I am looking for advice on prep & cooking them. [p]I have mesquite & maple wood chips, but, I am not sure if I should use them to get a sweet flavor or use bbq sauce.[p]Thanks in advance...

JeepGirl,[p]Just pulled 5#'s about an hour ago. Individual ribs about 2-3"s long..Covered with a rib rub, Garlic herb and black pepper. refrigerated overnight. Cranked up large 7 AM and started to do indirect at 250F for 6 hours. Threw a handful of pecan chips just before the ribs and let smoke away After 2 hours basted with orange juice and bbq sauce mix diluted w/water and did this every hour after 4 hours dropped temp to 200F. total cook time 6 1/2 hours. Dinner is calling sooon!! We like sweet flavor of orange juice and the sauce to serve is whatever the moods are!

Forgot to add, the ribs were bone side down the first 4 hours. left membrane on this batch, too much hassle to remove. Also raised grid

Richard,[p]I went searching the archives, unfortunately, after my post... It was pretty obvious that I had asked a question that had been asked before...[p]If you use indirect heat to cook ribs, does that mean using a plate setter or a grill extender? I have both, so I am wondering which to use... I have used the plate setter twice, to do pizza, and it seems to diminish the temp in the egg significantly... Maybe, I am doing something wrong...[p]Thanks...
