Reheating pulled pork

Matt,Larry Lambert used the following technique last year at the Florida fest and it worked out very well :
This is not so much a recipe, as a technique.
1 I wanted to serve pulled pork for lunch, but was unable to tend the grill overnight.
2 I rubbed an 8lb boston butt with yellow mustard, followed by Dizzy Pigs Raging River rub. Wrapped in plastic wrap and refrigerated overnight.
3 In the morning I cooked it indirect, about 225-250 using cherry and hickory chunks for smoke flavor, until the internal temp reached 195, about 14 hours.
4 When the butt was done, I wrapped it in foil with a mixture of apple juice and BBQ sauce (I use a locally produced sauce from David Barbecue in Gainesville), and stuck it in the refrigerator for a couple of days.
5 On the morning of the fest I reheated the butt at about 250-300, still wrapped in foil, for about 3 hours, then pulled it, mixing it with a combination of David’s hot and mild bbq sauces and some apple juice.
6 For the fest, I ordered some Silver Dollar rolls from Publix bakery. These tiny rolls are perfect for sample sizes sandwiches. Piled the pulled pork, and some coleslaw on the rolls and served.

BSinAZ, if you are talking about small amounts for a few sandwiches, it works pretty well to smear a little bbq sauce on it and heat it in the microwave. Pork has enough fat it in that it doesn't easily dry out. Another way is to put it in a zip lock bag and let it heat a few minutes in a large pan of simmering water.

I happen to prefer the Coca-Cola method as I have had great success with that method - but first thing you need to know is the Coke DOES NOT flavor it nor change the taste! Why it works I'm not real sure but it eliminates that lousy warmed over taste IMHO and really works wonders on beef as well. Quantity wise I prefer one 12 oz can of real Coke, - no diet stuff, nor any flavored Coke either and NO!, pepsi will not work so please don't try to substitute. I find one can for two to four pounds of pulled pork is fine when done in a crock pot at low temp and stirred from time to time. Even warmed in a pan on the stove works but in that case stir often and keep it low! The real secret though is not to tell your guests - it's weird, but people wrinkle up their noses at the Coke idea since they think it will be sweet or something - but it isn't, nor is there even any color left, but if they don't know the secret all they do is applaud you for the wonderful pulled pork!

I reheat mine in the oven (about 250 degrees) in a disposable foil pan with some foil over the top. I add enough Coke to keep the pulled pork moist and "toss" the meat occasionally. It seems to work for me if I heat it up slowly. Then just before serving, I give it a few squirts of BBQ sauce and sprinkle on some Dizzy Dust and give it one more "toss" You wont taste any Coke at all.[p]hope it helps.

BSinAZ,[p]If you are doing it in the microwave, I would suggest using the defrost setting. For me, anyway, this sems to reduce that "warmed over flavor".[p]Larry
