Anyone ever cook a Buffalo Tri-Tip?

My local butcher, R&R Meats (link below) is advertising a special on Buffalo Tri-Tip Roasts for $4.99/lb (regular Choice Tri-Tips at $3.99/lb), so I figure at that price, why not buy a couple of buffalo roasts? What I wonder is: 1) how the flavor compares vs. beef and
2) cooking times and temps (different than beef?)
3) Would Morro Bay Rich's Santa Maria-style Tri-Tip work on buffalo?[p]
Thanks.[p]Dan

Big Hoser ,
I think it would work. Here is one in EVOO and Dizzy Dust. Don't overcook.[p]Mike

    Big Hoser ,
Man, Morro Bay Rich's Santa Maria Tri-Tip recipe will work on an old shoe and buffalo are a LOT more tender. Heeee.

Big Hoser ,[p]Matter of fact...I have, several times![p]It's akin to Cow (as you might'a figured)...but a little leaner, and with a slightly more earthy flavor![p]BuffaloSirloin5-1.jpg[p]I sear hard, and finish at a lower temp till it hits.... 125'ish or so![p]BuffaloSirloin7-1.jpg[p]Let it rest...slice like a "Cow_Tip"...and you'll really enjoy!![p]Evans[p]PSSS....MBR's recipe would work well here, I'm sure!

I spent most of my money on good bourbon, and bad women...the rest, I just wasted!!

Morro Bay Rich,[p]I'm just hoping in my first attempt at cooking buffalo tri-tip I don't turn it into shoe leather! Oh, well. Nothing ventured and all that jazz.[p]Dan[p]P.S. Looking forward to meeting ya and tasting "Morro Bay Rich's Santa Maria Style Tri-Tip" straight from the source at Eggs By the Bay next month. I'll be cooking up some Maple Salmon on cedar planks (Chris' recipe on the Dizzy Pig website). That reminds me, I've got to order some more Raging River![p]

Chubby,[p]Thanks for the tips (and pics)! If mine turns out looking half as good, I'll be one happy Egger! [p]On another note, this piece o' meat looks like a great candidate to cook on my small using my new Gratemates, eh? And, what recipe did you use in those mouth watering pics? Big Hoser,[p]Right you are...the Small would be the ticket I'd think!![p]I make a paste of Lea&Perrins,Balsamic vinegar, Soy,and any good steak rub. slater on...let it set for an hour..to two.[p]Brushed a time or two while finishing with the Same L&P, Balsamic, soy mixture...(without the rub, just for sime extra flavor.[p]Good eatin!!
See you soon @ EBTB in Jume?[p]Evans

Big Hoser,[p]We will have cases of Dizzy Pig available at the Eggfest, since you are an Eggfest cook...you'll probably get a deal.[p]-Smitty
