First Boston Butt

Cooked my first butt last night. Put it on around midnight checked on it a couple of time during the night. The temp. stayed around 300 degrees. I tryed to get it down by dampering more but it stayed pretty constant at 300. This was also my first cook on my new large egg. THe butt came off early around 10:30 am but it was excellant. Any suggestions?

  • Mike in Georgia, Try cooking at 225 to 250 and let the meat get to 200. You will have pulled pork

    Sounds like everything went great! Congrats! And it's a good thing you checked the temps during the night...Sometimes newbies 'set it and forget it' and go to sleep and they're not happy with the outcome![p]Cooking a Butt indirectly at a dome temp of 250 - 275 is ideal...But 25 degrees ain't gonna make much of a difference when cooking a Butt...they're loaded with connective tissue and difficult to screw up....So, now worries....[p]Enjoy![p]Ed McLean...eddiemac
