How long to cook rib trimmings?

Unknown
edited November -0001 in EggHead Forum
hey all,[p]i have a couple of pounds of rib trimmings from when i cut down 6 racks of spares to St. Louis style ribs. [p]how long do i cook these trimmings for? is the 3-1-1 method too long, b/c these trimmings don't have any bones and are pretty small pieces...

  • Natural Born Griller, when I cook ribs, I sometimes put some of the trimmings on the grid for snacks. They are usually done in one hour. Any longer and they begin to dry out and get touch. Test them in one hour.

<p />Natural Born Griller,[p]We usually cook a mess of trimmings indirect around 250 dome for about 4 hours or more depending on when the big pieces are done.
Most of the smaller pieces will finish before the larger ones and they'll tend to dry out a bit like jerky if you wait to pull them off with the larger ones... which isn't necessarily a bad thing... especially if you coat them a few times with sauce through the cook to build up a nice tangy crust.[p]The trimmings pictured below got a little hot in the end but they still tasted good. Good Luck![p]john[p]RibTrimmings.jpg
