I have some real nice trout. It has cleaned and cut in half. Best way to cook please? I'm thinking raised grid, skin side down. Butter, salt, pepper, and slice lemons. Temp around 300?[p]Mike

that'll work. when it flakes easily, it's done.[p]i smoke mine at a lower temp, maybe 250 dome, indirect, but raised direct @ 300 will work too and be done sooner.[p]olive oil on the skin and it won't stick to the grid.

I EVOO about every thing. LOL What kind of smoke do you use and how much? Fish soaks it up pretty well doesn't it?
