Wild Duck: Any Suggestions

I'm cooking up three wild duck this weekend. Would this be a good bet? Stuff them with apple and onion, with some apple under the skin. Because wild duck is often dry I plan on wrapping some bacon around them beauties. Cook indirect (plate setter) with drip pan at 300*. I have some fresh cut apple wood that I plan on throwing in there as well. Is 300* good and does anyone have any thoughts about this recipe.[p]Thanks,[p]CC
