Brisket
Well, yesterday I put a 12 pound brisket on the Egg. Used hickory for smoke. Set the dome at 240 and put the meat on at 9:00 am. About 1:30 pm, I got a call from a friend to play gold. So off to the course I went. Back home at 6:45 pm and that meat was 208 internal. Wrapped in foil for hour or so and couldn't stand it any longer. I nailed the brisket. It was tender and very tasty. Having it today along with chicken for those that don't eat beef or pork. Being born and reared in the heart of Dixie, South Carolina, although brisket is good when done right, boston butt is still king for bar b q .[p]Chef Jerry

Jwirwind, LOL. I'm a native Texan where "barbecue" means "beef brisket." At a family gathering a couple of weeks ago, I put both pulled pork and brisket on the buffet line and, with the exception of one person, they all went for the brisket. I guess it's just what you grow up eating. I've been feeding my kids and grandkids brisket since they were babies. But, I hasen to say barbecued pig is great stuff too. Glad your brisket came out ok.

Chuck/Tx,[p] In the Carolinas 'Barbecue' is an adjective for chicken, Ribs and Beef. BBQ is a noun meaning PORK and a verb for the process for cooking Pork.[p]Look at the menus in NC restaurants and you'll see BBQ and Barbecue Chicken Platters. Order on and you'll get 14 chicken and a pile of pulled pork. [p]

Celtic Wolf, I understand. In the "south" some folks feel strongly about the meaning of barbecue as a noun -- where barbecue = pig. I wrote and published an article in a small-town newspaper one time about barbecuing briskets and was taken to task by a reader for calling brisket barbecue. I'm sure you know the good folks in NC have never agreed on a sauce for barbecue. On one side of the state they use a vinegar-based sauce and on the other they use a tomato-based sauce. My wife is allergic to tomatoes and makes the vinegar-based sauce. I've developed a taste for it on pulled pork also. I think the bottom line is that opinion varies a lot on everything related to barbecue -- which makes if even more interesting.

Chuck/Tx,[p] Read what I said again.. 'Barbecue' is not pork. 'BBQ' is Pork. While there is the Piedmont Sauce and Eastern NC Sauce we all agree 'BBQ' is pork
All the other stuff is 'Barbecue'[p]

Celtic Wolf, ohhhhhh, I didn't catch that distinction. There is bar-b-cue, barbecue, and BBQ, which is all the same to me. I didn't realize any state/region made a distinction of what "it" is according to the spelling.
