Smoked Chicken with Alabama White Sauce

<p />I seem to be one of the few people here who likes chicken cooked slo-n-lo with lots of smoke flavor. I smoked this one for 5 hours at 250 dome, indirect, with two pretty large cherry chunks for flavor. I rubbed it down with an aromotic rub (it had ginger, cloves, allspice, tumeric, cumin, corriander, cayenne, and some other spices as well). I mixed the rub with about an equal amount of cornstarch, and am pleased to say that the skin was quite tasty. It did not get as crisp as at high temps, but it did firm up and develop some great flavor. I also poked the skin with a fork a lot before applying the spices, especially around the thighs and other areas where fat can be seen under the skin--this helps to release the fat and aid in crisping the skin.[p]As soon as it was off the fire, I gave it a good brushing with Alabama White Sauce:[p]IMG_0971-1.jpg[p]The combo of the cherry smoke, spices, and white sauce is tops in my book.     Bajatom,[p]It was not out of a box, but pretty darn close.[p]Boil two cups of elbow macoroni according to box directions. Combine with 12 oz velveeta 1/3 cup milk, and some pepper. Mix over low heat until all is melted.[p]Certainly not fancy, not refined, but the mac-n-cheese was not the star of tonight's dinner.

    Between you and Rick we need to get together this summer for an Ohio minifest. You guys kill me with your cooking.[p]We Egged pizza's tonight. I took a large pan full to the Hospital for some friends. Their son is in ICU. It's been an altogether bad weekend. I think I'll do some ribs tomorrow after church and take them some ribs in the evening after the crowds clear. There was probably 20 people in the waiting room tonight when I first got there.

    I like my father in laws take on times like these...."increase calorie intake". There is nothing you can do but pray, you don't feel like it but you need to so you might as well eat.

    I did my first chicken yesterday, beer can spaneked on indirect at 225 dome for 4 hours along with a chuck pot roast, with some hickory wood chunks the chicken came out tasting just like bacon. Mmmmm, bacon!!!

    brad,[p]About 1/2 cup mayo, 1-2 tbsp. cider vinegar, a lot of cracked pepper, some cayenne pepper, a pinch of onion powder, and then 1-2 tbsp. water. You should add the water so that it is at the consistency you like--I like it to be kind of on the thin side.[p]I had my doubts before I tasted it on chicken, but now it is all I want when I have BBQ chicken. I think it is from a place in Alabam called Big Bob Gibson's BBQ (and I hear that they have buckets of the stuff, and dunk the chickens in them as soon as they come off the cooker).

    Thats what the did on a Food TV show spotlighting the place. Every time I think about doing that to a poor chicken I get queesy. :>)
