<p />Thawed out a small pork loin roast. Rubbed it down with a nice Jerk rub. Misted with Pineapple juice every 1 hour.[p][p]Indirect at 225 for a couple hours.[p]
Basted with Mojito sauce. Rum based, Mr. Spring Chicken[p]Ready to slice and serve.[p]Mike

Nice. I did one earlier this week and marinated it all day in Lowry's Caribbean Jerk then put on DP Fire Walk. Nice flavor and a good bite at the end. I wish I had a mango salsa or guacomole to add when I sliced and put on a sandwich later in the week.
