Stuffed Bell Peppers

I made stuffed bell peppers for dinner last night. They were great. The peppers picked up alot of smoke flavor, the meat/stuffing didn't really. My wife had made the stuffing mix for a party saturday and she had alot left over. She had stuffed mushrooms with it, and so I took the leftover stuffing and mixed it with some ground chuck and filled the peppers. The stuffing is just some grated pepper jack cheese, beef flavor stove top stuffing, spinach, minced onion and salt and pepper. I went indirect with alder chips at 350 for 30 minutes, then went direct on raised grid for another ten minutes.
