Stuffed Bell Peppers Tonight

My Wife served stuffed mushrooms at a wedding shower this weekend and she had alot of the stuffing leftover. I am going to mix the leftover stuffing with some ground round and then stuff some bell peppers. I am thinking indirect, 350 or so, some soaked alder chips on the coals. Anybody done these before? If so, any advice would be welcomed. Thanks!
