Help with Baby Backs

In process of cooking 2 racks of baby backs.[p]Doing 3-1-1.5[p]Currently cooking 250-275 for 3 hours in direct with plate setter on rib rack. Spritzing every 1/2 hour with apple juice/ cider[p]Then will foil for 1 hour.[p]QUESTION...should I go the final 1.5 direct and should I place ribs meat side down or rib side down?[p]THANKS!
