Help with Baby Backs
In process of cooking 2 racks of baby backs.[p]Doing 3-1-1.5[p]Currently cooking 250-275 for 3 hours in direct with plate setter on rib rack. Spritzing every 1/2 hour with apple juice/ cider[p]Then will foil for 1 hour.[p]QUESTION...should I go the final 1.5 direct and should I place ribs meat side down or rib side down?[p]THANKS!

Egger, That last hour could be a 1/2 hour, I have some go quick and some go long, It is a matter of how much crusting you like.

He says he no longer does direct for the last step as of Mar 2006 but I did the last hour and a bit direct
I brushed Bone Suckin Sauce on one side, close the lid for 15 minutes, flip, brush the other side, close lid 15 mins, flip, brush and so on. I ended up doing it five times[p]It was last weekend and I posted some pics
