Smoking Jacket,[p]Below is a recipe I have used with success. The length of cooking time really depends on thickness of your london broil. If you have a quick-read thermometer, you can just cook until 125-130 internal for med-rare. I set up on the lower grid with direct heat at 425 degrees dome temperature and grill for 5-7 minutes per side (depending on thickness)[p]London Broil[p]5 large garlic cloves
1 teaspoon salt
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 Tablespoon soy sauce
1 teaspoon honey
1/2 tsp ground black pepper
2 tsp lemon juice
1-1/2 pounds top-round London Broil[p]Pierce london broil with tines of fork and score
with knife in diamond patter on both sides so
marinade will absorb.[p]Mince and mash garlic to a paste with salt and,
mix with remaining marinade ingredients.
In a heavy-duty sealable plastic bag combine London
broil with marinade. Seal bag, pressing out excess air,
and put in a shallow baking dish. Marinate, chilled,
turning occasionally, at least 4 hours and up to
24 hours.[p]Bring steak to room temperature (takes about 1 hour)
before grilling. Prepare grill. Remove steak from
marinate, letting excess drip off, and grill at medium
high heat on an oiled rack for 4 to 7 minutes on each
side for medium rare.[p]Transfer steak to a cutting board and let stand
10-15 minutes before carving. Cut across the grain in thin
slices.
