These were really quick and quite fun.

I was goofin with my egg this past weekend and decided to give somethin a try. Earlier in the day I stopped @ my favorite Mexican store and bought a bunch of stuff.[p]Here's the dilly. Get your egg idleing @ 400 dome. Take some 8" flour tortillas (that you bought earlier) and spray the top with olive oil. Not the bottom cuz it sticks. :>( The first few I just added a pinch of oregeno and sprinkled with 3 types of cheeses. Cooked for about 10 minutes or so or until the cheese tells you to remove. Absolutely yummy. Went like free money. Hmmmmmm, where have I heared that before???? :>)[p]The next several were done as follows. Spread refried beans, top off with Guac, and add cheese. These went even faster. Then the cook got to eat so I seeded jalapenos and cut them into thin strips. refried beans with strips of peppers and loads of cheese. My golly miss Molly these were awesome.[p]If no one has claimed this little treat then allow me to do so right now. "MickeyT's fun tortilla things" Got a good ring to it don't ya think??[p]Kinda like quesadillas (sp) without the top and a hell of a lot better.[p]They are so fast and easy you can cook them for appetizers or a substitute for wings if you like, or in addition to wings sounds better.[p]I did manage to get a picture or 2 which I will post tomorrow.[p]Bye now,[p]Mick

    Sounds great. I've done similar goodies in the oven, but for some reason it never occurred to me to Egg them. Duh. I'll give them a try.

    <p />MickeyT.,[p]Sorry for the photo. I would normally have a pizza stone on top of the sitter. It cracked in half the day before. Went back to the place where I bought it and gave me a new one no questions asked.[p]The tortilla in the back is corn. The 2 in the front are flour.[p]

    Some suggestions to try:[p]Leave off the Guac, at least until after the cook. Brown some ground beef. Mix with refried beans and green chili. Spread on flour tortilla, top with a mixture of cheddar and mozzarella cheese. Sprinkle top lightly with crushed red pepper and cook.[p]K

    These look fantastic! I love mexican type foods and this looks so simple and tasty I will have to try it. We're on a low carb diet, but I will deviate a little if the food warrants i. And I think this does. ;)
