Pork Butt Question

Unknown
edited November -0001 in EggHead Forum
I put a 9.04lb butt on last night. 11 hours later, with my GURU set at 225 and my Egg gauge at 255, my thermopen is telling me that the butt has an internal of 196 degrees. [p]I never heard of a butt cooking this fast. Has anyone had this happen?

    Martini Man,
Yes. [p]Forum particpants will tell you it is done when it is done. The other measure I like is the wiggle test. Grab the bone and wiggle it. If it feels like you can pull it out easily and the temp is where you said I would say your are done[p]Only one butt cook was the bone not perfectly clean with no effort on my part.[p]I am cooking one starting tonight also...no guru yet although it is on the list. I like the forum suggestion of getting used to cooking without it. It is amazing how well the Egg does by itself. The winters are tougher Eggwise and that will be my main excuse for the guru purchase
