Anybody got a good fried potatoes recipe ?

I am looking for a recipe for cooking up sliced taters with some onions, salt, pepper kind of thing. I've had them several times before, but never prepared them. any help is appreciated.[p]Chris

    i love doing hash browns in the egg. . . use either a cast iron skillet or a wok. . . [p]dice up your potatos and onions. . . in a hot skillet or wok, put in about 1/2 to 1 stick of butter (depending on how many taters you're doing). .. and some vegtable oil. . . throw in you taters and onions. .. keep em turning with a spatula so they don't stick and burn to the bottom of the wok/skillet (btw, you want a nice fire burning under the wok/skillet, but aim for a dome temp of around 425). ..add some kosher salt and pepper to taste (or some dizzy pig raging river rub) . . .keep em turning till they are nice and soft.. . for a real treat, add in some leftover, cubed up prime rib or steak. . .makes a great main course. ..

    if im just doing potato hash, the canned slice potatoes come out great, i actually like the canned ones better than fresh as the cooking time is way down for these. fry them in some bacon grease first then add the peppers onions and some garlic and continue cooking, salt and pepper.[p]for something way better look for recipes for red flannel hash. its what you make for breakfast after a boiled corned beef cook. basically fry up a half pound of bacon remove and add chopped corned beef, and chopped vegetables from the dinner, the potaotes, parsnips, carrots, turnip, cabbage, whatever was in last nights cook. also add some beats for the red flannel. smear it in a layer in a pan and heat it slowly so that it crisps on the bottom and edges in all that bacon grease. runny eggs either overeasy or poached. [p]i also cook new potatoes the night before, just the real small ones. boil them til soft with the skins on, then cool them down and refridgerate them overnight. in the morning set up to deep fry, put the potatoe between the palm of your hands and pop it by sqeezing. fry it in the oil, drain, add salt pepper, parsely, and some sqeezed lemon or lime ,or just eat with ketchup.[p]i think the picture was smoked pastrami potatoes and eggs.

    i usually just eat greasy pork pies for breakfast, there really is grease flowing thru my veins. with all this "bad" stuff i eat i should have cholesterol off the charts, but ive always had lower levels, 170-180. my protien levels have been low as well and my doctor actually tells me to eat more meat. cant seem to lose the weight though

    Funny, I guess different Drs. have different ideas on it. My last count was 151 and he told me I needed to change my diet to get it lower, go figure.

    Smokin' Nole,[p]Another way of doing them is to make hash browns..or
    Take a potatoe and grate it...[p]The trick is to put the potates in a wash cloth and sqeeze all the water out of them before cooking..[p]This way they cook up crispy on the outside and soft in the middle ..not mushy!
