Sweet & Sour Pork Recipe

This is for everyone wo wants a very good Sweet & Sour Pork Feast.[p]Authentic Chinese Sweet and Sour Pork
(from a Chinese cookbook, as translated by Shou Ching Chou)[p]Loin Pork Chops, 1 lb.
1/2 tsp salt
1 Tbsp soy sauce
1 Tbsp corn starch
1 egg yolk
Corn starch, for dredging pork
1 large green pepper
1 carrot
1 can pineapple, chunk or tidbits--whatever you prefer
2 cloves garlic
Corn oil--no substitutions, it must be corn oil[p]Sauce[p]3 Tbsp sugar
3 Tbsp vinegar
3 Tbsp soy sauce
1 tsp salt
Tomato paste (as much as you like)[p]1. Cut pork into small pieces, removing excess fat. The pieces should be two inches square. Put the pork in a bowl, add 1/2 tsp salt, 1 Tbsp soy sauce, 1 Tbsp corn starch, 1 egg yolk, and blend. When mixed together, let stand for 10 minutes.[p]2. Cut carrot and pepper into small pieces.[p]3. Coat the pork in the dry corn starch. Fry it in hot CORN oil until it turns brown.[p]4. With three Tbsp hot corn oil, stir fry carrot, green pepper, chopped garlic, and pineapple for one minute. Add the pork and the prepared sauce, and mix together until it becomes thick.[p]Enjoy!
