Scallops are done

First I would like to thank everyone who replied to my question regarding pan seared scallops. After seeing the recipes I decided to keep it simple for now as I am on the South Beach Diet, but they are in my recipe file and will be tried out as soon as this diet is over. I found and old recipe of Paula Dean's that used roasted peppers around the scallops. So my wife bought some nice red peppers and we roasted them this afternoon for tonights meal. When the peppers were finished I wrapped the roasted peppers around the scallops drizzled them with some EVOO and a shake of Tsunami Spin. Here they are first on the egg and after the first flip.[p]

[p]Once finished about 8 minutes (4 min. per side at 375) thet came off and they were good. This South Beach thing isn't so bad concidering that what I really want is some pulled pork and ribs.[p]



Everyday is Saturday and tomorrow is always Sunday.
