Richard:[p]I give them a short ice brine in the sink (boil water and kosher salt, add to cool water in sink, add ice, then birds) for about one hour. Then I season just as I would with chicken - whatever you like. Sometimes it is just salt and pepper, other times with Lawry's and some Obie-Cue's. I have been known to pour some of my favorite Italian dressing over the birds and let them sit in the refrigerator prior to grilling.
