Well, if the feds hunt you down, it's good to see you have a knife handy to fight 'em with . . . Also, isn't jus counterindicated for maximum latop performance -LOL-.     ChefRD,[p]I cut slits in the beef and stuffed with garlic. I then seasoned the beef with garlic peppercorn charcrust and some black pepper. This was then seared for a couple minutes per side in a pan over high heat with extra virgin olive oil. I then placed the beef in a small cheapo drip pan and egged for about 1.5 hours over hickory at a temp that rose from about 200 to about 370 (I wanted to see the temp rise quickly). Meanwhile, I deglazed the pan in which the beef was seared with some beef broth then added two scoops of unsalted butter and a boatload of herbs de provence. At the end of the simmer, I added a little bit of flour to thicken the pan sauce. The pan sauce was delicious!!! I definitely think this is the way to go for a beef roast...[p]A good Mother's Day cook that drew raves from my parents.

    MikeO,[p]As for that IRS document, that's a pretty threatening looking envelope that was actually addressed to someone that used to live at my address. I'm going to return to sender on that one... The bottom line is that I REALLY need to clean my table...[p]As for the camera, I bought an Olympus D-460z (I think it was one you mentioned on your list that you provided when you responded to my original post). It's a 1.3 megapixel camera that gets really good reviews. I need to check out a small issue where the lens doesn't always pop out when I open the cover. Don't know if it's a stupid user error (me being the stupid user) or if it's a battery issue or if it's a defect. Other than that, though, it's a pretty cool camera. A little out of my stated price range, but that's what impulse buys are all about![p]Later,
