Pulled Pork Question

I just pulled the shoulder off the grill this morning (5:45am). I was suprised it only took just under 8 hours for the lo & slow. Had the temp set at 240 and took it off when the internal temp reached 200. It's really tender and ready to be pulled. None the less it's done.

We're having a birthday party today and planned to have pulled pork sandwiches for dinner (around 5pm). The main dish is ready just a few hours earlier than expected. :)

I have the shoulder wrapped in foil and a towel and placed it in a cooler. Can I store it like this until 3 which is when I plan to pull it? Should I pull it and place in the fridge, then reheat later?

Any recommendations?
