First brisket turned out most excellent, thanks in no small part to the advice here! I was a little concerned about having a good fire established to last all night. But when I woke, the temp was still on a perfect 250* and smoke still coming out the vent. This only reaffirmed what a great investment this is!
After I pulled the brisket off, I brought the temp back up, grilled some veggies while I experimented with roasted corn grits. Throw in some pork and beans and we had another excellent meal thanks to the EGG!
Now, for leftovers!
