Smoking 4 racks of pork ribs in a Lg. Egg

I've been told to just stack the ribs on top of each other, and also told to use a rib rack that allows them to stand on their edge. I always thought that you wanted the fat to melt down through the ribs which wouldn't work if their standing on their side.
Any and all suggestions are welcome and appreciated![p]Thanks
David

  • davidv,
I like using a rib rack. You can let them go longer before opening the dome, standing on edge they dont need to be rotated. If you were to stack them on top of one another the ones in the middle would never brown up.[p]Wess

    davidv,
ribs laid flat make a better presentation, but cooked vertically they taste the same and you get more. vertically you can give them a little more heat without burning in my experience. i cook mostly direct so that may be mainly my experience. you dont want them touching each other, they will still cook , but they wont get a nice look to them
