First Pork Butt
Going to be egging my first pork butt tonight for supper tomorrow. Have put plenty of JJ's Rub on it and will cook it low and slow (225* if I got my temp control problem fixed) for about 20 hours. I am somewhat concerned that there might not be enough fat on the top to keep it basted (It's about 1/4" thick but doesn't cover the entire top). Think it would be a good idea to cover it in the morning with a couple of strips of bacon while it finishes up?[p]Thanks![p]Kelly

There is enough of a cap on it and the fat inside will baste it well as it breaks down. No need for bacon strips. Your in for some fine eating.
