Hey All,[p]Saw Charwoody's post about the lobster tail recipe. I looked to see if it was in the new recipe section and didn't see it.[p]Is it just a need to update, or is it only in the forum? If it is only in the forum, seems like it would be pretty well lost once it is archived.[p]Tried Spin & Uncle Buck's Clams Casino recipe over the weekend. As we were putting it together my wife and I discussed that it had better be pretty special or we wouldn't go through the process again. Well we both agree is was really special and MUST be done again, some good eats if you haven't tried it yet.[p]Cheers,

Houndog originally posted his recipe on one of the other forums. He does not often post here, and has not posted the recipe.[p]I agree. Spin's and UB's clams casino were pretty serious.

Jethro, Houndog advised me that he has updated this a bit, so I invited him to come on and post a updated version. Hopefully he will do that soon and maybe submit it to the recipe section here. Its his recipe, so I won't tinker with it..:-) Pretty grand the way it is..he made it even more so.

Yep. Houndog is a top notch cook, and would not be suprised if he has improved on what is already a legend. Can't wait to see his tinkerings! good fella. And a killer homemade green chile powder.[p]NB

Jethro,[p]Print out Houndog's recipe for keeps as it is quite good.[p]I agree that the clams casino recipe prep is a bit long. Fresh clams are best, but if you can obtain canned whole clam meat, restaurant supply stores can provide aluminum foil shells that have a flat spot on the bottom so they don't tip during the cook. Extra clam shells can be stored in the freezer (well wetted). The peppers, garlic, and scallion mix can be made in advance. It freezes well and doesn't degrade the flavor or texture. The bacon can be rendered during a low and slow cook or while your Egg is cooling down (a little smoky flavor is not a bad thing). Freeze for future use.[p]I am glad you enjoyed them.[p]Spin
