Doing a turkey breast tomorrow. Will season and inject it tonight, let sit till tomorrow. I'm thinking indirect with drip pan under "V" rack at about 350-375 for what...probably 4 hours. Sound about right?
Guess load up the firebox fairly heavily to keep/maintain temp for that length of time?

Shelby, is this the whole carcass less leg and wing? If so, time it like a whole bird. How big? At your suggested temperatures, figure 15 minutes per lb. 10lbs = 2.25 to 2.50 hrs.
