If you had no access to charcoal, Would it be an option to use wood in the egg or is that a no no?, I don`t mean "in a pinch", I mean burning wood in it all the time?

    <p />Mop,
Yep. It can be done. I did this "caveman" cook with only wood and no thermometers or seasonings. Just like it is tricky using all wood in an offset, it is a bit tricky in the egg. The hardest part is to keep the fire burning cleanly....which is very tough without being able to add small pieces of wood regularly. Would help to have a little trap door on your cooking grate.[p]The results were a bit oversmoky, but the sirloin tip here made a killer pot of smoky chili![p]It sure was fun.

  • It wouldn't be practical for long cooks because you would have to keep adding wood. Besides losing temp, if you were using a drip pan and firebricks, it would be a pain to keep moving them so you could add the wood (too bad there's not a ceramic cooker with an offset firebox). For short cooks, I think it would work fine, but you would probably want to let the wood burn down to coals before putting the meat on. Otherwise, it would end up too smoky.
