Pulled Pork McMuffin

I was thinking about what to have for breakfast this morning. I had some whole grain English muffins and some eggs, but I could not think about what to use for meat. Then it dawned on me, I still had leftover Carne Adobadas and heck that was basically pulled pork so I figured what the heck let’s give it a try.[p]I grabbed a small cast iron skillet and put a little bit of the shredded pork in to start to heat it up. I dropped a muffin in the toaster. When the pork was warm, I pushed the meat to the side of the skillet and fried an egg over easy. Next, the assembly was as follows: muffin bottom, pork, egg, crumbled Queso Blanco and muffin top.[p]It was so good that I think that I ate it in about three bites.[p]If someone from MickyD’s is reading this, I want credit for the McRib McMuffin.
