What's the difference? I made my first Buckboard Bacon at Christmas and it was a big hit. I want to do another but not sure which cut to use. I usually get a Boston Butt (about 6.5 lbs. @ $2.50/lb)from the butcher down the street. Then, the other day I was at Costco and saw that they had a Boneless Pork Shoulder (about 11 lbs. @ $1.59/lb).
What's the difference? Can I use either cut for Buckboard Bacon or Pulled Pork?
